Super Simple Hot Dog & Potato Packets

If you’re looking for a quick picnic lunch in your backyard or just a really easy meal to throw together on a Friday night, this is a great solution.

Ingredients:

  • 4 hot dogs
  • ½ c. barbecue sauce
  • ¼ c. shredded cheddar cheese
  • 1 small onion
  • 1 pack of refrigerated red potatoes

Step-By-Step:

1. Cut your onion and potatoes into wedges.

2. Lay out four squares of foil.

3. Divide your potatoes among the foil and add one hot dog to each.

4. Top with your onion wedges, cheese, and barbecue sauce.

5. Fold the foil, sealing the edges together.

6. Place on your firepit for 10 to 15 minutes. 

7. Be careful when you open it, as steam will arise.

Delicious Fire Pit Quesadillas

Ingredients:

  • 2 chicken breasts
  • 1 can of black beans
  • 1 jar of your favorite salsa con queso
  • 4 flour tortillas
  • 1 c. shredded cheese – Mexican blend is best

Step-By-Step:

1. Rinse and drain the can of black beans.

2. Grill and slice the 2 chicken breasts.

3. Lay out your tortillas and spread a tablespoon of your salsa con queso over half of each.

4. Add a layer of chicken to the salsa con queso.

5. Add ¼ c. of black beans and ¼ c. of cheese on top.

6. Fold the un-topped side of the tortilla onto the other side.

7. Wrap in a piece of foil but leave the ends open.

8. Place on your firepit and leave there until the cheese has melted and the tortilla is to your desired crispiness.

9. After you take it from your fire pit, cut it into four sections.

Glazed Meatball Kebabs

This quick and simple recipe is full of sweet zestiness that will leave your taste buds longing for more.

Ingredients:

1 bag of thawed, precooked meatballs

2 sweet peppers – mixing up the colors adds some extra flavor and pizzazz

1 c. barbecue sauce

Step-By-Step:

1. Cut your peppers into one-inch sections.

2. Stick a skewer through a couple of peppers before adding a meatball.

3. Add more peppers and meatballs until you’ve covered your skewer.

4. Place on your fire pit before brushing one side with your barbecue sauce.

5. Flip in about a minute, brushing barbecue sauce on the other side.

6. Continue flipping and brushing about every minute until your meatballs are heated. It should take no more than 8 minutes.
