Keep in mind if you’re nervous about cooking raw food over your firepit, it’s easier to start with things like hot dogs or pre-cooked sausages. Here’s a recipe for a spicier take on cornbread to make in a cast-iron skillet over your campfire from Food Network star Ina Garten. 

Jalapeno Cheddar Cornbread 

  • 3 cups all-purpose flour
  • 1 cup yellow cornmeal
  • 1/4 cup sugar
  • 2 tablespoons baking powder
  • 2 teaspoons kosher salt
  • 2 cups milk
  • 3 extra-large beaten eggs
  • 1/2 pound (2 sticks) melted unsalted butter
  • 8 ounces grated extra-sharp cheddar cheese
  • 1/3 cup chopped scallions
  • 3 tablespoons seeded and diced jalapeno peppers

Combine all the dry ingredients in a large bowl. Then, in a separate bowl, combine the wet ingredients. Then mix the wet ingredients into the dry bowl and stir until just combined. Some lumps are fine. Then stir in the extra sharp cheddar and jalapenos. Pour the batter into your cast iron skillet. Set it on your grate over some hot coals for at least 45 minutes until the top starts to crack, and a toothpick comes out clean. 

Just make sure that any of the bakeware you use is suitable for an open flame. Cast iron, of course, is strong enough, but so are stainless steel cookware and bakeware. Some brands will specifically say that they are made for camping out and cooking. 


Desserts and S’Mores Over Your Campfire

Don’t forget the dessert when you are planning to cook a meal over your campfire! Traditional s’mores are a staple, and one kids will be very excited about helping you create. For dessert, you can get even more creative to grill up stone fruits, like peaches and plums. That makes for a tasty and healthy option for any guests you are entertaining. Serve it with some homemade whipped cream or even vanilla ice cream.
