Looking for a simple and delicious meal enhanced by spending time by the fire? Then check out these easy shrimp skewers from Cubbie Hawk BBQ in Iowa. There's lots of room for customization, so don't be afraid to tweak the recipe and make it your own.
Preparation
What you need:
- Raw (but not Frozen) Shrimp
- Olive Oil
- Salt, Pepper, Garlic, and Seasonings of Choice
- Parsley or Herbs of Choice
- Metal or Bamboo Skewers
- Lemon
Toss the shrimp in olive oil in either a bowl or gallon Ziploc bag. Season with a seafood rub that has salt, pepper, garlic, and herbs such as parsley. We recommend choosing your favorite herbs for this one! Then, put the shrimp and olive oil mixture in the refrigerator for about an hour to let the seasonings come together.
Skewer the marinated shrimp on either bamboo skewers that have been soaking for at least an hour, or use metal skewers (we prefer metal skewers - it's just easier!). Push your skewers through the thickest and thinnest parts of each shrimp, as this will allow them to sit on your fire pit grill better.
Grill
Halve one lemon and place it over the fire on your BBQ Grilling Grate at the same as the skewers. Cooking shrimp doesn't take long, especially over wood, so you'll want to flip them a few times to ensure they don't burn. Right before they're done, take the grilled lemons and squeeze the juice over the shrimp as the final piece that brings it all together. Pull at the recommended temp, which is 145 degrees internal temperature.
